Steaks, Roasts, Ground Meat & More

What to Expect When Having an Animal Custom Processed

Having an animal custom processed gives you more control over the meat that ultimately goes into your freezer. Instead of purchasing predetermined cuts, you can make decisions about steaks, roasts, ground meat, package sizes, and other processing options based on how your household actually cooks.

If you have never worked with a custom meat processor before, some parts of the process may be unfamiliar. Understanding what happens from scheduling through pickup can make it much easier to prepare for your appointment and make confident decisions about your order.

Scheduling TO Select Cuts

Your Guide to Custom Meat Processing

Understanding the custom meat processing process can help you prepare for your order. From scheduling and selecting cuts to packaging and freezer storage, Turk Brothers Custom Meats helps you know what to expect every step of the way.

What Happens Before Your Processing Appointment?

Custom processing begins with scheduling your animal for processing. Our processing is handled by appointment, so customers should contact us ahead of time rather than arriving with an animal without a scheduled date.

Before your appointment, it’s also helpful to start thinking about your cutting instructions. Consider what types of meals your household prepares, which cuts you use most frequently, and how much freezer space you have available.

What Cutting Decisions Will You Need to Make?

Your choices depend on the type of animal being processed. With beef, you may make decisions about steaks, steak thickness, roasts, ground beef, stew meat, brisket, ribs, soup bones, and other cuts.

Hog processing can involve choices about pork chops, roasts, ribs, ham, bacon, sausage, brats, and other products. Thinking about how you normally cook can help you choose options you’ll actually use.

What Happens After the Animal Is Processed?

After the initial processing, the meat moves through the appropriate steps before cutting and packaging. For beef, we generally recommend an aging period of approximately 7–14 days before the meat is cut.

Once it is ready, we follow your cutting instructions to prepare your order. Your finished meat is vacuum sealed and prepared for freezer storage.

Why Is the Take-Home Weight Lower Than the Animal’s Original Weight?

Live weight, hanging weight, and take-home weight are three different measurements. Live weight refers to the animal before processing, while hanging weight is measured after portions such as the hide, head, blood, hooves, and internal organs have been removed.

Additional weight is lost as the meat is aged, trimmed, deboned, cut, and prepared. Your individual cutting instructions also affect how much packaged meat you ultimately receive.

Whole, Half Or Quarter Beef

How Should You Prepare for Pickup?

Make sure you have adequate freezer space before bringing your finished order home. A whole, half, or quarter beef can represent a substantial amount of packaged meat, and larger pork orders also require adequate storage. Having your freezer cleaned, organized, and ready beforehand makes pickup much easier. Keep the meat frozen once you get it home and organize the packages in a way that allows you to easily find and rotate different cuts.
